The ingredients needed to cook Banana bread:
  1. Prepare 2 eggs
  2. Take 5.5 tsps liquid or powder stevia
  3. Get 1/2 cup veg oil or coconut oil
  4. Use 1 tsp vanilla extract
  5. Use 2 tbsp natural yoghurt
  6. Get 1 1/2 cups walnuts or mix nuts
  7. Take 3 ripe bananas, mashed

  1. Preheat oven to 180 degrees on conventional or 160 degrees fan forced. Line a loaf pan and set aside.

  3. Add in oil. Beat until mix thoroughly. Mix in yoghurt and vanilla with the electric mixer. Add in mashed banana and mix.
  4. Add in mixed nuts. Stir with a wooden spoon.
  5. Sift together the flour, salt, bicarbonate of soda and cinnamon together in a large bowl.
  6. Pour the wet mixture into the dry mixture. Fold gently with a wooden spoon until mixed thoroughly.
  7. Pour mixture into the prepared pan and bake for 45-50mins or until a skewer inserted comes out clean
  8. Cool in pan for 10 minutes then tur. Onto wire cooling rack to cool completely.
