  1. Take 1 C white sugar brown or
  2. Prepare 2 eggs (or 1/2 C yogurt/dahi for 'veg' option)
  3. Provide 1/2 C ghee , melted & cooled (or vegetable oil)
  4. Take 1 tsp cinnamon ground / dalchini
  5. Use 1/2 tsp mace ground / javatri
  6. Use 1/2 tsp cloves ground / laung
  7. You need 1 tsp baking powder
  8. Take 1/4 tsp salt
  9. Use 1 TBS ginger preserves
  10. Provide 3 bananas very ripe , pureed or mashed finely with fork
  11. You need 1 & 1/4 C flour maida /
  12. Provide 1/2 C walnuts chopped (optional)
Steps to make Bollywood Banana Bread:
  1. Preheat oven to 350F/180C. Butter & flour an 8"x 4" loaf pan.
  2. Combine eggs (or yogurt/dahi), spices, oil (or ghee), baking powder, ginger preserves, & salt in large mixing bowl. Stir until well mixed.
  3. Add bananas & beat until well mixed.
  4. Fold flour into mixture until just combined, do not over mix.
  5. Pour batter into buttered & floured pan, top with chopped walnuts. (Oops! Someone ate the walnuts I was going to top this with!) Bake for 50-60 minutes or until tester stuck in the middle of bread comes out clean.
  6. Allow to cool for 10 minutes before removing bread from pan.
