  7. Use For Biriyani–
  8. Prepare 1 1/2 cups Seeraga Samba Rice
  9. Take 1 tsp Ghee
  10. Get 2 tsp Oil
  11. Get 1/4 inch piece of Cinnamon
  12. Provide 2 Cloves
  13. You need 1 Cardamom
  14. Get 2 Medium sized Onions sliced
  15. Use 10 Shallots roughly chopped
  16. You need 2 Green Chillies,slit
  17. Prepare 2 Medium size Tomato chopped
  18. Provide 1/2 tsp Ginger garlic paste
  19. Take 1/2 tsp Turmeric powder
  20. You need 1 1/2 tsp Chilli powder
  21. Use 1 tsp Coriander powder
  22. Use 1/4 cup Coriander leaves without stem
  23. Use 1/4 cup Mint leaves
  24. Take 1 Tbsp Curd
  25. Get 1 Tbsp Lemon juice
  26. Prepare Salt-as per your taste
  27. You need 1/2 tsp Biriyani Masala
  28. Provide 3 cups water (include mutton boiled water also)
Steps to make Mutton Biriyani:
  1. Add the ingredients in a bowl given for marination (except water) and marinate for 30mins.
  2. Wash and soak the rice for half an hour.
  3. Add the mutton pieces in a pressure cooker and pour required amount of water till mutton pieces soak. Place it in the stove.
  4. Cook for 1 whistle in high flame. And then keep in medium flame for 20 mins.
  5. Place a heavy bottom curry pan in the stove. Switch on the flame. Add 1/2 tsp ghee and oil.
  6. Once oil gets heat add cinnamon,cloves and cardamom. Fry it.
  7. Then add onions and green chillies. Saute until onions becomes translucent.
  8. Then add ginger garlic paste and mix for a minute. Add tomatoes. Mix well.
  9. Add turmeric powder, chilli powder and coriander powder. Saute well until tomatoes becomes mushy. Do not burn.
  10. Then add only the cooked mutton pieces. Keep the mutton boiled water to add it atlast.
  11. Add coriander leaves and mint leaves. Mix well.
  12. Add 3 cups of mutton boiled water. If it's not enough you can add plain water.
  13. Then add the washed rice,curd,lemon juice,biriyani masala and salt. Mix well. Wait until it boils.
  14. Cover and cook in medium flame for 2 mins.
  15. Meanwhile place a dosa tawa in another stove heat it.
  16. Then open the curry pan mix well and place it above the hot dosa tawa. Cover the curry pan with a white cloth and cover with a lid above it. Keep in medium flame for 10 mins.
  17. Then switch off the flame. Open the lid take off the cloth. Mix the rice and add 1/2 tsp Ghee above it.
  18. Again cover with the cloth and close with the lid. Leave it for 10 mins in that tawa heat itself. This is Dum stage.
  19. After 10 mins mix the rice well. Biriyani is ready to serve. Serve hot with onion raita and dalcha.
