The ingredients needed to prepare Mutton Biriyani:
- Take 400 gm mutton cut into pieces
- Prepare 5 potatoes cut into two halves
- Use 500 gm basmati rice
- Use 8 green chillies slitted
- Get 100 gm yogurt
- Take 2 teaspoon red chilli powder
- Get 1.5 teaspoon ginger paste
- Get 2 cup chopped onions
- Take 1.5 teaspoon garlic paste
- Get Vegetable oil as required
- Take 1/4 teaspoon food colour
- Take 1 tablespoon ghee
- Get 3 bay leaves
- Use 2 tablespoon kewra water
- Take Biriyani Masala
- Get 1 teaspoon jhaiphal powder
- Prepare 1 teaspoon javitri powder
- Take 4 green cardamom
- Prepare 6 cloves
- Use 1 inch cinnamon stick
- Prepare 1 teaspoon shah jeera
- Use 1 teaspoon white pepper
Steps to make Mutton Biriyani:
- Grind all the masalas under biriyani masala and keep it aside.
- Marinate the mutton with yogurt, salt, red chilli powder, ginger paste and keep it covered for at least 1 hour.
- Heat some oil in a wok and add half of the onions. Add a pinch of salt and fry them till golden brown. Keep it aside.
- Add the potatoes and some salt. Fry them till golden brown in colour. Keep them aside.
- Meanwhile half cook the rice with some salt in a container. And keep it aside.
- Add rest of onions in the same wok and fry them till light brown. Add the garlic paste and again fry them till the raw aroma dissapears. Add the marinated mutton and fry them well.
- Saute the mutton until the moisture dissapears and the oil starts separating.
- In a container add a the first layer at the bottom with the bay leaves and again add a layer of rice, followed by a layer of mutton, again with a rice. Add some biriyani masala, potatoes and fried onions, some ghee and some salt in each layer.
- On the uppermost layer, add the green chillies, kewra water. Mix the food colour with 1 tablespoon of water and add it in a circular way.
- Heat a tawa and put the container on it. Cover it with a lid and lock the gaps between the lid and the container by a dough of wheat flour.
- Simmer the flame and keep it covered for 30min.
- Remove it from the flame and serve hot.
