- Peel the potatoes and half them and place in a bowl with the food color and let it sit to absorb the color
- Thinly slice the onions and place in a large pan and deep-fry till caramelized then remove and set aside
- In the same oil, fry the potatoes but don't cook just to get the yellow crunchy coat then take off heat

- In a larger pot.. Place a layer of the rice… Then a layer of the biriyani stew then some of the half caramelized onions left…it should look like that…. Then continue layering till both are finished
- On the top layer finish with rice and onions on top… Add your food color sprinkling it all over…cover with aluminum foil and put back on low heat for about 10min..to cook the rice
